That’s what they said on the show ... but there was some technical chemical explanation given by a Canadian chemist I didn’t follow not being a chemist. Long and short is: water dissolves everything, given enough time and the right conditions.

Actually Gold does dissolve in water, just in very very small quantities. They can test for it, even in seawater now.
