We have smoked all of our turkeys for the last ten years. The left over meat tastes better longer that way. To me turkey tastes bad after just a couple of days.

I’ve been brining for several months now (pork chops, turkey breast & Cornish hens). I don’t use the quantity of salt and sugar this recipe calls for. I use 4 oz of salt and 2 oz of brown sugar.

I use apple cider, brown sugar and salt, then smoke it.

I smoked mine as well, but its all good. I am sorry I should have thanked you for the link. My wife fell off a ladder and has to have knee surgery next Tuesday. So we will not be having family over this year and may just roast the normal way using this recipe.

I have wanted to do just one or two turkey breasts for years, to make less work, but my wife won’t hear of it. It’s Thanksgiving, we have to be traditional, stuff the bird and cook half a dozen sides, even if it’s just three of us. It would be easier to cook, easier to carve, and less leftovers. But no, I always lose…..
It still comes out good, but I want to enjoy the experience, not get stressed out by it.
