I’ve had the same thing happen to me more than once. I was talking with a plumber one time about a clog in the outside line from the house, about a certain part (a cleanout), and moments later ads for that part (and others) showed up on my FB feed. I had never searched for that, but had the phone in my pocket while I was talking with the plumber. Only one of several times this has happened.
Finally, someone is listening to me! ;)

When you see an advertisement for something you and someone else were just talking about then yeah, they’re monitoring.

Here’s one for you, tried and proven. Year or more back, I had to get a new phone. I used a back up to restore all the phone apps.
I started getting FB friend suggestions for some people I didnt know. A few days of this and I figured out they were all people who worked at a place I was going to for lunch. I disabled all location services and it’s never happened since.
IT people, especially programmers, are not the most honest I’ve found. They often can get to data they shouldn’t be screwing around with. I wouldn’t doubt FB had some program that looked at location, people who were associated with that location, and then triggered a FB suggestion.
The Navy command where I worked encouraged everyone to join facebook and had a page of their own. Probably three quarters or more had clearances for RD and NSI.
I always thought they just wanted to spy on us and never joined.
Seriously people, why are you still on FB? There are much more friendly platforms now. I don't even have a phone for the last 7 years. You don't need one.

I know it is ads show up after a conversation. Problem is that is how small towns and schools get info out to the public.
Android won’t let me uninstall the FB app, but only leave it as “disabled”. Any idea if they are still doing their evil (for intel agencies, presumably, btw) with that status? I’d guess they’re up to something like that—or google would allow it to be uninstalled.

They do a good job of hiding it too.
You turn it off with that power button on side. If you want a private conversation, that’s the only way to be sure. Even then I wouldn’t be too sure.
That was our clue.
We were discussing some of the construction materials in my backyard.
Suddenly he got a message that it was available on FB Marketplace.
And then it happened again for some other key word we spoke 30 min later.
I don’t know if this was from my device monitoring my conversation, because I did tell my wife what I was going to do, or if it was from my device knowing exactly where I was. (I had the Location function off.) I was sitting in line waiting for my Indiana vehicle emissions test. The Yellow Pages app sent me a notification: “Will your car pass the Indiana emissions test? Make an appointment with a mechanic today.”. My car passed, but thanks anyway , Yellow Pages.

Or never installing Facebook to begin with!
