We were bored and looking for some new recipes. My husband is 'religious' about low-carb/Keto - (he lost a lot of weight years ago, and has kept it off; and got his A1C down to normal levels) - and I love roasted or grilled veggies.
We found this recipe for a sheet-pan dish of Greek-inspired chicken and vegetables, from Downshiftology. Here is a video of how it's done:

My husband likes a traditional Italian olive-oil salad dressing, and always makes his own. I like gloppy, creamy ones. We recently found this recipe for Ranch Dressing which avoids the possibly deleterious oils in store-bought ones (the word is that this is best using fresh herbs; but if you don't have access to those or don't want to spend for fresh, I'm sure it would be good with dried):
Ranch Dressing
1/2 cup mayonnaise
1/2 cup sour cream
2 tbsp Heavy Cream
2 tbsp white vinegar
1 clove Garlic minced
1 tbsp Fresh Dill finely chopped
1 tbsp Diced Parsley finely chopped
1 tsp Chives Finely Chopped
1 tsp Onion powder
1/4 tsp Mustard Powder
1/2 tsp Pink Himalayan Salt Mix it all up in a jar, and shake vigorously to combine.

Mrs. Brown and her husband at Whippoorwill Hollow have also been doing 'low carb', and the other day we tried this recipe for Zucchinni Squash Au Gratin; it was really good:

I often make stir fried veggies and chicken and use the tubes of garlic and ginger. I keep them in my freezer and pull them out at the start of my prep. By the time I get to them they have thawed enough to squeeze out what I need and then pop them back in the freezer. They keep a long time that way.
Walmart’s bananas we got from the curbside pick up looked fine yesterday but are really getting brown this morning. Needing to put them in the fridge already and hubby doesn’t like them cold.
That’s a great idea, thank you! They are not cheap & that’s a good way to preserve the contents. I have only used the basil, but since my rosemary burned up I am going to pick up a tube.
Deboned, marinated and grilled thighs are the best. Also great with grilled veggies on the side.
I’ve found it useful to hydrate some of my vegetables. They last longer. They get dehydrated in transit and sitting in the store.
When I get lettuce, broccoli, cauliflower or celery I immediately slice off the bottom of the stem and put it in water, cover it and let it soak up what it needs. It lasts much longer. The celery I keep in water in the fridge after cutting the bottom.
Here is a really simple Keto Ranch Two ingredients, heavy cream and vinegar, season to taste many variations. Video Here.
Thanks. Serious Keto is one of my husband’s favorites. (He does exhaustive experiments with ‘chaffles’.)
that’s a very good idea - you can do it with fresh herbs, too. I would cover the top with a ‘baggie’.
When they start to get too black, I peel and bag them, and put them in the freezer to save for smoothies or banana bread.
Smoothie (much better than Starbucke):
1 banana
a handful of strawberries or other frozen fruit
about 8 ounces of apple juice.
Whiz in the blender.
Why would you want to pee in the blender?
You might be making a smoothie for Hillary.
‘Whiz’ can have a lot of meanings.
Are you 12 years old?
Walmart has the worst produce and the prices aren’t that great.
Their garlic comes from China. (Chinese garlic has no roots)
When’s the last time we’ve seen a head of lettuce where the bottom wasn’t browning?
“I’ve found it useful to hydrate some of my vegetables.”
Thanks. I’ll give that a try.
No, were you born without a sense of humor?
Great idea I will be using. Thanks!
Great idea I will be using. Thanks!
Maybe I just don’t appreciate ‘potty humor’ on my cooking thread.
(With few exceptions, we’ve always done our best to even keep politics out of it. People have found that restful.)
>>hydrate some of my vegetables
Very clever. Never thought of that. Thank you.
