Got Corn? You Should Be Putting It on Your Pizza
Southern Living ^ | August 13, 2021 | Betsy Cribb

It's the unexpected topping your summer pizza has been missing.P> People have strong opinions when it comes to pizza toppings. There are the toppings that most Americans generally deem acceptable, barring dietary restrictions: pepperoni, mushrooms, extra cheese. And then there are those that a not-so-silent majority tend to relegate to the no-fly list, like pineapple. But regardless of your stance on pineapple's place on pizza, there's no denying that pizza provides an exciting opportunity to experiment with what's in season, and in the summer months, that means corn.

This time of year, corn is a real heavy hitter. It's easy to come by, and tucked between the heirloom tomatoes and whole okra at your area farmers' market, it's both alluring and approachable. There are dozens of ways to enjoy corn too: incorporate it into salads; stir it into salsas; roast it in the oven; char it on the grill. Regardless of how you're preparing it, corn adds a fresh, sweet crunch to mealtime that just can't be replicated by anything else. And it's that inimitable burst of crunchy sweetness that makes corn the perfect pizza topping too.

Before the anti-pineapple-on-pizza crowd pipes up with protests about how corn, like the tropical fruit, simply does not belong on dough, hear me out. Even when baked down so that its acidity is tempered, pineapple tends to make its presence known. That's why it's a standout ingredient in so many of our recipes, from Pineapple Pepper Slaw to our famous Hummingbird Cake. But that's also, I imagine, why it's such a polarizing player in the pizza-topping game.

Corn, on the other hand, is a true team player, quietly complimenting everything around it, rather than demanding to be the MVP. With corn included in the same bite, grape tomatoes taste sweeter and basil's brightness shines. Corn also humbly picks up the slack for its fellow pizza toppings: melty cheese, for instance, gets a welcome crunch.

Try one of our recipes for a corn-studded pizza.

So whether you're pro pineapple or entirely against it, next time you've got a surplus of corn, sprinkle a handful of kernels atop your pizza. Your tastebuds will thank you…and may even convince you to give pineapple another whirl.

We make pizza year ‘round here.

In the oven in the colder months and on the grill in the summer.

The Wife tries many different permutations/combinations and I believe she would put corn on a pizza - IF there was any left over.

I grilled chicken thighs and five pieces of corn yesterday. No leftovers...

MANY years ago in a bar in Germany I ordered what the menu called a “Pizza amerikanischer Art” (American-style pizza), curious to see what that was. You guessed it - topped with corn (Maiz). The waitress told me that what Americans like on their pizza.

Years ago I went to a pizzeria in Seoul. They brought out a pizza with corn on it. It didn’t do it for me.

They’ve been putting “you should” everywhere these days. Also, they are using “hack” incorrectly. So annoying.

I would try corn. Most any leftover would do except maybe sauerkraut and canned peas.

No leftovers on my pizza, please!

(Unless I suppose it is leftover sausage or mozzarella or mushrooms or basil or the like...)

Any tips/recommendations on the best way to use a gas grill for pizza? I’m thinking I would need to start with a stone and a peel at the least. LMK and thanks! (and if it saves keystrokes, zap me a link)

A couple of years ago Casey’s (Midwestern convenience store known for its pizza - they’re, in fact, the 5th largest pizza purveyor in the country) created a limited time pizza with a name like “Heartlander.”

It had, among other ingredients, corn as a topping. It didn’t make much difference plus or minus to me. It did seem a bit weird but based on the theme of the pizza it certain did fit in with that.

Cosmo Kramer wanted to put cucumbers on the make-your-own pizza in the shop he was starting with Poppy. Look what happened to that deal.
