It's no more technical than a large scale livestock operation, wouldn't take up a lot more room and they'd have a product they can sell for $30/yd. One person on a loader could maintain it for 5-10 hours a couple of times a week.

Three years is what I remember, to go from “fresh” to “ready to sell”.
Big issue is containment. Poop, to be blunt, is water soluble.
