Believe me it gets MUCH easier as you go.
I can barely look at bread anymore without getting queasy.
The main thing you will notice is that your appetite goes way down. You will no longer crave it. And when you accidentally eat some you will regret it.
Your stomach will deflate and your joints will stop hurting.
The wheat flour causes inflamation.
I slipped up a couple of weeks ago when I started a new contract and all they had was sandwiches... by the end of the week I could barely walk.
Once you get used to it a steak salad will look much more appetizing to you than anything with bread. My salads are like a meal- spinach and arugula, hard boiled eggs, beats, pumpkin seeds, chia seeds, dried cranberries, cheese and more cheese (mmm Feta cheese) grated carrots, pumpkin seeds, sunflower kernels.... balsamic vinaigrette
Dam... now I’m hungry.
Side benefit - I am no longer hungry constantly - almost never. an egg or two and a salad every day is all I need.

What in it causes the inflammation? The gluten proteins? If so, then anything containing gluten is a culprit, and that would mean avoiding more than just wheat — barley, rye, malt in various forms, brewer’s yeast...
How long did it take for your joint pain to subside? Longest I went was a week.
