I cut it like french fries. Dip in egg and bread crumbs and fry in olive oil.

I use reg unseasoned bread crumbs and not panko...but everyone to their own.

So I sit at my computer...and munch. So good. Darn...now I want some. Tomorrow!!

Recently ran out of bread crumbs so I put some Sun Chips Garden Salsa chips in the food processor. (Was making colcannon patties) YUM.

Think I’ll use them on eggplant sticks. Thx for the idea!
