Shuggie’s Trash Pie & Natural Wine — the ambitious, new pizzeria that plans to make its pies with food waste — is now opening in the Mission District.
Originally set to open in North Beach this spring, the restaurant will now open in the Mission District sometime this fall, a spokesperson for the restaurant told The Chronicle. The North Beach location fell through unexpectedly, the spokesperson said, but declined to provide details.
Shuggie’s will now take over from margarita destination Velvet Cantina, which permanently closed due to the coronavirus pandemic last summer. It’s bigger than the original planned location, and will seat a total of 48 people, with the restaurant offering a mix of indoor dining and a parklet. An opening date hasn’t yet been announced.
Co-owners Kayla Abe and David Murphy announced plans for the pizzeria last November, making it one of few restaurants in the country to showcase food waste in such prominent way. Murphy, who is also the chef at the restaurant, plans to make two kinds of pizzas: a neo-Neopolitan, a slightly sturdier version of the classic and a grandma pie.
Toppings include items that might typically have ended up in the garbage like carrot tops that will be used to make chimichurri and excess milk from a local farm that will become ricotta. The pizzas will feature proteins that aren’t usually used such as pork jowl and smelt.
Abe and Murphy also own the popular Ugly Pickle Co., which pickles excess produce from farms.

Between the feces on the street and serving food well past its expiration date, it is a wonder that more diseases not seen since the Great Earthquake haven’t been seen in San Francisco.
