I would like to make kefir milk. I have read a few pieces about that but I would like to hear from anyone here that has experience. Where to buy the grains? Will store bought milk work? So many things I wonder about and I guess I just need to try and hopefully won’t poison myself or my husband. This is a health/food slide. Apologies.

A friend who is good at making kefir sent me grains in the mail a few years ago. I did make it with regular store milk, we have good milk around here, and no matter what I did it was not like Nancy’s or other kefir that is smooth. It was slightly grainy or curdley looking; just slightly. Asked friend and she said that’s how home made kefir turns out, I think she blends hers or something. After several tries I gave up and just stick to making yogurt.

"kefir milk" my wife makes this we both drink. Its an excellent source of good bacteria. If you didn't get your answers. I need to ask my wife.

I'm also looking into Chaga Mushroom which seems to be the base chemicals are from Tryptophan (Vit B3 Niacin) and Tryptophol (Chaga Mushroom.) Yeast attacks the natural amino acids essentially by splitting off carbon dioxide and replacing the amino group with hydroxyl. By this reaction, tryptophan gives rise to tryptophol.
In other words Chaga Mushrooms seems to be a natural form of Niacin.

Benefits of niacin is a very long list (primarily reduces anxieties and raises HDL by 30%)

“I would like to make kefir milk.”

It’s pretty easy to do. It isn’t like “store bought” but it’s got more good bacteria. It also can produce whey, which you can use to start sauerkraut, if you want to try fermentation.

You can purchase grains, or sometimes people have extras they’ll give you.
