He wasn’t found to ‘have no pulse’, the officer said he could not ‘find one’- there is a difference. The officer very well may not have known how to find one, or could not get a proper angle to test from, etc. It doesn’t mean there wasn’t a pulse.
And the sirens of the ambulance were on the way, the proper course of action was to hold him in restraint until the ambulance got there to definitively find whether or not there was a pulse and signs of life while George was more securely restrained on a gurney incase he suddenly regained consciousness and tried to violently resist again.
Many many cases where a person passes out, shows no signs of life, even no actual pulse, only to bolt awake again minutes later.
That is the key reason to keep a large oldest man who was actively resisting in a drugged out state, restrained until he could be properly restrained in a safe manner and worked on medically by professionals.
The defense has brilliantly made this point several times now, even getting the prosecution’s own witnesses to admit these facts

Agreed. But what nags at me is that Floyd was handcuffed at the time. What damage could he have done if he somehow got out of a looser restraint? Maybe he’d just stumble around until he was taken to the ground again.
And that’s thing about using force, be it your fists, a knee to the back, or some sort of weapon. You’re only supposed to use the minimum force necessary.
Did Chauvin use only the minimum force necessary? I dunno. And yes, I know that a hostile crowd was gathering. That made matters worse. So I’m not saying Chauvin is a murderer. I’m just trying to sort this all out.
