Our NJ.com foodies have been raving about the mustard pie from Papa’s Tomato Pies in Robbinsville for years. Naturally, I had to see what all the fuss was about for our latest series, N.J. Takeout Stakeout, which highlights great to-go dishes across the state.
Mustard on pizza? I know, it sounds crazy but, trust me, it’s crazy delicious! The pros at Papa’s know what they’re doing. The spicy brown mustard is drizzled onto the dough first. Then comes the cheese and, finally, the lightly sweet tomato sauce is spooned onto the top of the pie before going into the oven. The order of those ingredients guarantees a delightfully crispy crust that doesn’t droop when you pluck out your slice of choice.
The combination of the tangy mustard and the sweetness of the tomato sauce is why this pie is a time-tested favorite.

Sounds good to me.
Well, take out the mustard, take the extra sugar out of the tomato sauce, lay down a bunch of mozzarella and top it with pepperoni and it’s fixed.
Dammit now I want pizza...

And if you really want to experience some Hawaiian style pies slather mayonnaise on the crust too.
My new fave is pesto, sausage, and mushrooms on sourdough crust. Got my neighbors hooked on it, too.
Yuck.
Since I live right around the corner I can attest to this pizza being great. If you get sausage and onion it’s like a sausage sandwich. It’s really good
