Milk is separated into curds and whey, solid and liquid. The curds are used to make real cheese. Then the whey is boiled, and you get another solid — mozzarella/string cheese. Finally, the liquid that is left is mixed with vegetable oil and emulsifiers, and called “American cheese”.
It’s not cheese.

When it comes to grilled cheese sandwiches and cheeseburgers, there's no substitute for real American cheese.

I think “cheese food” is vile. One has to look very carefully, since almost all the choices are cheese food. Kraft marks a perfectly good real American cheese, but not all stores carry it.

Balderson’s aged cheddar (yellow or white) is fo’shizzle mah nizzle!
Tillamook is pretty good, but there is something in the background I can’t place when I eat it, and I don’t like that.
And that stuff referred to as “American” cheese may be American, but it most certainly is NOT cheese!
