Of necessity. Either time or money has usually been at a premium and I’ve spent most of my life living rurally, so no restaurant options.
But, in the long run, it’s been fun and the food is its own reward.
My husband, however, was appalled when we moved and it turned out a entire chest freezer was devoted to chicken carcasses, beef bones, saved fat(s), saved drippings, and several bags of chicken skin & fat. The bags of produce ends, leftovers and some peelings was his last straw. He was shocked to discover how many dishes he loves owe their existence to this stash.
Now, I just used the various ingredients as they occur, although there are containers of fat/dripping and a bag of skin & fat in the back of my freezer.
News alert: the Walmart closest to our new place carries chicken paws!!!!! Again, DH was slightly disgusted when I explained what they were. Can’t wait to make some chicken stock with them! ;)

Tasted an ox-tail reduction (on veal chops...also now rare) once. Can still taste it.
I never see it out here in the rural Midwest. I miss affordable thick veal chops. They were common in the 40s/50s.
Cannot locate Campbell’s condensed gumbo soup.
Target, Ralphs, Pavilions, Vons are out of stock.
I did a search on google and it has been out of stock on and off for months since the plandemic started.
You can order from Amazon 12 cans for about $50 and it would arrive in a week to maybe January. Each can at a store would be about $1.50 so I will not order from Amazon.
They used to give away the ox tails, now the asians have it $11 the lb

Sounds like a family favorite. But, chunked cheddar put in bottom of bowl, butter, onion and wine vinegar on top....soooooooooooo,good.

I’ve never met a roasted chicken carcass I haven’t frozen, so homemade chicken stock is always in my freezer, too. Great soup base for just about any soup you want to make.
Pickled, Jewish-style, cold and sliced w/mustard on pumpernickel. I love it!!
I’m 77, Jewish-by-birth, had one grandma from The Ukraine and another from Lithuania. Grew up on old country Jewish cooking. (I remember peeling the chicken paws to make soup and the delicacy of unborn eggs) I still make gribenes, chopped chicken liver. Haven’t found tongue anywhere in years and my husband is not a fan, he thinks). We need to replace our smoker and I have a plan to use an already-corned beef and peppercorns to make my own pastrami. All I can find in this part of the country is goyishe-style with a cut of round and I want brisket. I know how to corn a brisket, but the commercial corned beef brisket is ok. Not sure how much time to allow for a commercial corned brisket to still get the smoke flavor.
There is an Asian store in the nearest medium-size city. Probably why the Walmart there had paws. I’ll check for ox-tail. A little goes a long way.
