[[I asked about Trichinosis, but was assured German pigs had no such diseases.]]

Ummm- don’t believe that- while their incidents are down, they do still exist- especially when they use wild boar without havign it inspected for larvae- and you are relying on overworked, underpaid inspectors to pass tons and tons and tons of pork as safe- not sure I’d mess with raw pork at all

supposedly in US the new recomendations are cook to 145 now, since feeding habits of pigs have been changed- but still-

Great! I was sure you were a good source of info on this culinary dish which I had never heard of prior to this article. You make it sound tasty! :)

Oh, you betcha! It IS tasty! But use freshly ground steak, rye bread rounds, lots of freshly sliced onions (Red or White, depending upon where you grew up in Germany, and salt & pepper. ;)

Wisconsin FLOWS with amazing goodness! Cannibal Sandwiches, Lefse, Lutefisk, Friday Night Fish Fry with Old Fashioneds and ‘Church Basement Ladies’ Casseroles (aka ‘Our Moms’) that I can’t even begin to describe!

And don’t even get me started on our award-winning CHEESES and WINES! Cows and Grapes - who’d a thunk it? (More Germanic influence, for sure!)

Wisconsin is FIRST in production of Cranberries, and SECOND in production of potatoes - right behind Idaho! That darn Glacier churned up our dirt REAL GOOD in the center of our state and left a lot of potholes in the North to flood Cranberry fields each fall for easy harvesting. ;)

We grow a LOT of carrots and onions, too!

Life Is Good in Wisconsin. ;)

Just the opposite actually. The more you cook a steak cuts the tougher they get. 45 must have teeth made of admantium.

Not at all. Find websites and magazines for homesteaders. They ate producing better than anything in the chain stores.
