I’ve got a friend who is a fish farmer. She said that once a catfish gets over 3 or 4 pounds it’s only good for breeding. The bigger ones taste muddy.
But I’m sure they’d be better soaked in buttermilk before breading and frying!

For channel catfish when I was a KY teen, we used to net shad under a light at night.
Then leave them in a water-filled bucket on a barn roof for a couple days.
To fish, we would thread them whole on a night crawler rig.
We often caught 5-10 fish a night. All in the 3-10 pound range. Some way more.
