Just because a governor is a demshevik, if Trump gets a lot of votes in their states, they can’t order the electors to vote for Bitem/etc.

Counting the votes (including the mail-in votes), not the electoral votes. That's where elections are stolen. And with mail-in voting, it's much easier to create the outcome that they want. The Dems just need to get the vote within the margin of error to trigger recounts. Can Trump win a D-run state with an overwhelming majority of the vote? Yes, but states that have D governors are unlikely to produce those outcomes. The more likely outcome is razor-thin margins, which is what the Democrats want (they'd prefer to win outright, of course).
