I have read about freezing eggs. Also read about coating them in oil and refrigerating to extend good by date.
Just cleaned out and restocked the side by side frig. freezer as well as the overhead freezer for the spill over refrigerator and one we use for processing/holding garden produce and extra hamburger buns.
We have a small chest freezer that I’m working on using up the stuff. Have enough tomatoes to can a batch and then I’ll be able to stock some more stuff.
I have powdered/freeze dried egg stuff if we run out of eggs, but we have enough fresh eggs for at least another month or so. Likewise, lots of home canned veggies and meats. So we are not planning on going to the store.
We only went once after the guidelines and once for a pickup order, which I told hubby would likely be our last for at least 2 months. We just got our first case of CoronaChan last week. Now up to 4 people. So, I’d say a good 2 months before we peak here.

Wish I could say that. We still aren’t all that covered, but the nursing home where my 93 year old relative lives had a nurses aid test positive a couple of days ago. They’re taking major precautions, but we are worried and nothing we can do.
