Sounds like the premise might be the same as dry canning for beans and rice, where you heat them in the oven and then put the lid on and as the air cools it condenses creating a vacuum. I do toasted pumpkin seeds that way. Toast them and heat the jars and lids and while everything is hot, put the pumpkin seeds in the jar and seal it up.
