You want your shark to be four feet and under. The meat just isn't that good on the bigger ones.
It's best to BBQ them right after you land them.

We sure ate a lot of them at Ora Wan Beach.

Tag the little sharks as “Tasty.”

Which sharks do you like best? Years ago, a local pub had some very tasty shark appetizers on the menu but probably dropped it due to the anti-everything nazis.

What was your method of cooking and what is the time line for skinning, eating?

It's best to BBQ them right after you land them.

In the case of a mako, I usually let the steaks age a least two days , in the refrigerator, so the steak will relax and taste better. -Tom
