I make poor man’s fois gras....chicken livers.

I too make a “fois gras” out of chicken livers too. I use Kirsch (cherry brandy liqueur) in my recipe. To be honest I don’t like the idea at all of stuffing food down the throats of those birds, enough so that I do not enjoy fois gras at all.
