I'm going to take a different tack. As long as the rat eats "in the field" its diet is no different than raccoons and opossums. so the taste should be about the same. But you have to remember, not to eat raccoons and opossums that live around humans because they will eat just like rats.
If you were raised in the country in the south up until the 1970s, then you have probably eaten raccoons and opossums. They are almost entirely dark meat and taste pretty good. The only difference is that opossum fat is really greasy and slick, so we would scrape that off before cooking them.
