Shadowace, I kinda like the linked 'freedombox' software. Sadly, it looks like the last major update was in 2017. Also, if you want to set up a personal server like that, you run into the issue of ISPs that will block ports and stuff at will, and can effectively make such devices useless.

Sadly, I really do think the whole 'internet is television' model is where we are heading. It's already true for most folk. Some of us will be able to hold out and do our own 'independent' things, but it will get increasingly harder to do so as time goes on.
