Trinity - Onions, celery, & bell peppers
Mirepoix - Onions, celery, & carrots

These are slow cooked in fat to form a flavor base and act as a browning agent. Other vegetables, meat, such as ham, and herbs may be added. Mirepoix and Trinity are never sauteed (cooked on high heat).
