I have just recently started making stuff with the skin if I need something skinless and the chicken I have has skin.

Treat it like bacon, season a vegetable.

I would not eat from KFC, though.

Chicken skin tastes great on broiled, baked, BBQ, or rotisserie chicken, IF done enough so that it's darkened and crispy.
