In English-speaking countries, they are called “elvers” or “glass eels”: in England they were a popular fried food until the early 90’s.

We have a copy of Dorothy Hartley's "Food in England," the book which introduced me to elvers. Weird how it went from an inexpensive common food to an expensive rarity.

Slide over.
