The replacement roof was also TIMBER/WOOD... the Cathedrals roof has always been WOODEN for its entire history....

And wood is not fireproof.

There is currently a trend for building multi-storied buildings with new timber products. In tests the timber did as well as steel against fire. Maybe a possibility.
