That’s no lie. I hope this year has a more agreeable climatological aspect to it. Last year was a beast. We have about two, three week windows a year when it feels like we’re living on Planet Earth. Then it’s either a steam bath, or it’s chilly, gray, dreary, and feels like a location set for The Hounds of The Baskervilles. (Basil Rathbone version.)
Yeah, I pooch punted that cookout. And I had a full rack of beer-steamed ribs with Jack Daniels Old No. 7 sauce going, too. I steam my pork ribs in the oven in a covered roasting pan at about 250 degrees for two hours, then hickory smoke them for a good 30 minutes, before I move them over the heat and start mopping the BBQ sauce on. I let them go until they get that nice, crispy bark along the edges where all the sugars caramelized from the heat. The meat literally falls off the bone. Oh, man - that reminds me. I also got the heavy duty 110 VAC rotisserie motor, brackets, and spit for it, and I haven’t used it yet! Smoked, BBQ whole chicken, here we come! And as soon as the price of beef reaches a sane level, I’m pit cooking a roast over wood coals. WOO HOO! LOL
