My father taught me to rip the lettuce off a head. IOW....No knife.
I wrap lettuce in a towel and it keeps for at least a week.

I’m no metallurgist ... carbon allows the steel to become harder and stronger when heat treated, but at the cost of brittleness. The “high speed steel” alloys used in machine cutting tools (drills, mills, etc.) are high carbon.
