How can you be sure it hasn’t already happened? How could you tell if it was a complete duplicate of your every memory?

I don’t think so, as the brain is not an electric analog.
The brain is bio-chemical and electric.

How will an electronic circuit map out brain chemicals? These chemicals are FUNDEMENTAL to our thinking and emoting that makes us human.
As psychiatry has learned that many mental issues are NOT how you were raised by your mother, but rather chemical imbalances in the brain, so too would scientists discover the biggest problem with mapping a human brain electronically.
Possible to gather the data? Sure, but people think differently. Look at how two equally intelligent men will approach a task. That process may prove illusive.
It will happen. Maybe not in your lifetime but it will happen. Hubris or not. All the worlds current data storage is not enough today but it will happen sooner than you would believe.
Consciousness for that data will take longer still but it will also happen. Whether that consciousness will have a soul is not something I willing to speculate about but it will think it has a soul.
It took nature billions of years to construct something that could fly. It took homo sapiens magnitudes of magnitudes less time. Development time is rapidly shrinking. The last 150 years have been developing at an insane rate and it keeps getting faster. Moore’s law is starting to apply to everything.
You would go into a catatonic state if you understood the implications of what CRISPR-Cas9 has made possible. Ready for a human to run a 1 minute mile or want your kids to be born with a unicorn horn? CRISPR-Cas9 makes that an inevitability.
I am not arguing the ethics or morality of it at all. I am just saying mind blowing stuff is coming.

I once read a SciFi story about an android (in this case a robot that was indistinguishable from a human!) that lived as a human, married a human. The spouse dies distraught the android went to a priest to be comforted in regard of heaven for his dead spouse and to see if there was a place for him in heaven.
Very good philosophical discussion of what it means to be “human”. Religious implications of AI - is it really intelligence or mimicry. What’s “intelligence” does it imply “soul”? I wish I could remember the title of the story.
