Today’s wheat is pretty much ‘ultra-processed’. Eat at your own risk, if you want diabetes (or at least a much greater chance of it).
The best wheat to buy would be
- 00 from Italy but hard to find and usually in tiny quantities
Or, found in most stores,
- organic wheat from the USA that is unenriched. Check the iron content. It must be less than 2% of the rda. Then you know youre not getting the adulterated crap.

And if you are buying pasta, buy pasta made in Italy with Italian flour. Check to make sure it has a very low iron % to make sure it isnt our crappy enriched flour. If it has that 10%, its enriched, avoid.
Oh, and dont eat any product anywhere out and about in North America made from wheat because it will be the crappy kind and it does cause digestive problems and maybe worse.
I live on whole wheat bread, butter and strawberry jelly. And I eat wheat pasta and cereals. Coming soon on my 79th BD. No heart attacks, no diabetes, no cancer. But I do spend an hour in the gym every other day. 30 min treadmill at 20 min/mile speed walk and 30 minutes light (30 lbs) weight lifts.
Wheat is just another carbohydrate with 76 grams of carbohydrates/100 grams. Milk has a high amount of carbohydrates, 60grams/100 grams and raisins have 64grams/100 grams eaten. Sugar is 100% carbohydrate with 100 grams/100 grams eaten.
Some carbohydrates are absorbed into blood faster than others. It is eating foods, like sugared soft drinks that the carbs are absorbed the fastest. It is this spike in blood sugar that can set up a reaction where the immune system attacks the insulin meant to regulate the blood sugar to safe levels. Some people have some kind of poorly understood mechanism that sets up diabetes, when the immune system overreacts to insulin. Slowly digested and absorbed carbohydrates such as sweet potatoes, steel-cut oats, whole grain pasta, barley, quinoa, beans, lentils, nonstarchy vegetables and fruits, do not cause blood sugar spikes.
