A friend sent me this, it is Mike Huckabee’s wife’s recipe.
Seems a little rich.
Huckabee Corn Casserole
1 can whole kernel corn, drained
1 can cream styled corn
2 eggs
8 ounces sour cream
1 stick melted butter
1 box Jiffy corn bread mix
1 onion
1 bell pepper
2 cups grated cheese
Wilt onion and bell pepper in butter. As that is happening, combine all other ingredients except sour
cream and grated cheese.
Pour in 9x13 casserole dish. Mix sour cream with a little milk until a smoothconsistency and pour over the top of corn mixture.
Cover that with the grated cheese and sprinkle with
paprika.
Bake at 350 degrees until hot all the way through, about 45 minutes.
Sounds really similar to dollies corn bread casserole. Except I like the addition of jalapeños, garlic, pepper Rica, and salt in dollys. Sounds like it would have more flavor. The sour cream on top is an interesting idea, I dont think Ive ever seen anything done like that except cheesecake after it is already baked :-)

Very similar to my Mexican Cornbread recipe...with the onions and grated cheese. I use green chilies and no sour cream. May have to start adding that ‘secret’ ingredient :)
