My dad at night would eat leftover cornbread in butter milk or regular milk and salt and pepper it. WV and Ohio man. Mother made the hills of Kentucky style cornbread. She would put bacon grease in the bottom of a skillet and put it in a hot oven for a few minutes. Take it out and then pour the batter in the hot grease and back in the oven to bake.

Sweet memories. One of my sons picked up the cornbread in milk habit from his grandpa and the other one likes the fried grits grandpa ate. Things change, but some things carry on. :-)
