They can be hot. They can be messy. They can range from plain to spicy, served alone as a snack or with a whole range of toppings for a hearty meal.
Were talking about nachos, of course !
Its said that Anaya, a Mexican from the border town of Piedra Negras, inadvertently invented nachos 70 years ago in 1943 when hungry guests showed up at the Victory Club, the restaurant he was working at across the Rio Grande River from Texas. The dozen or so patrons were the wives of American soldiers who had been shopping in town and were now looking for some sustenance.
As the maitre d, Anaya found himself without a chef so he decided to rustle up something tasty for his guests. The only foods available in the kitchen were tortillas and cheese. He began making the dish by cutting the tortilla into triangles. The cheese was then melted by heating it together with the triangular chips. He topped the dish with jalapeno peppers to complete the first-ever recipe of Nachos Especiales otherwise known as Nacho's Special Dish.
Anaya, who was called Nacho because of his short stature, created a dish that would grow in popularity in Texas and the Southwest over the next 20 years. Anaya went on to work at the Moderno Restaurant in Piedras Negras, which still uses the original recipe. He also opened his own eatery, Nacho's Restaurant, in the border town.

Super Nachos
Spread tortilla chips on baking sheet; top with Cheddar cheese and dot with refried beans and cooked seasoned ground beef.
Broil until cheese is melted, watching carefully to prevent burning, 3-5 min.
SERVE Topped with salsa, sour cream, black olives, green onions, and jalapeno peppers.
One of my favorite nachos recipe:
Swiss Cheese Nachos.
Doritioes. Swiss Cheese. Jalapenos.

Made a killer mexican dish last night, you gotta try it.
Mashed cauliflower after boiling 10 minutes, a few tablespoons of sour cream, salt and heavy on some allspice mexican seasoning.
Great tasting and a super substitute for rice!
A small spread on bean dip on the chip, then add cheese.
More disgraceful “cultural garbage appropriation”.

“Instant Nachos for 1” for me, sometimes a weekend lunch:
Spread tortilla chips on plate, scatter sliced black olives over. (Optional: scatter pieces of pepperoni slices.) Spread liberally with grated cheese (can be most any kind but pepper jack and cheddar are good). 53 seconds on high in the microwave. Serve with salsa and sour cream.
It is not fabulous, but adequate to take care of a craving in record time.
HAT TIP LONE PALM
COMPLETELY remove the seeds/veins from a Habenero (wear gloves). Mince finely, stir into can of crushed pineapple.
Bring to a bare boil. Remove offheat, cool then chill.
Serve over vanilla ice cream.
Missed it by a day. Had nachos last night.
