“””Northern Indian Cuisine and Southern Indian Cuisine. Southern is a lot more spicy.”””

My experience limited to goat, or was it beef ;), and having to stay at an Indian run Days Inn in Parsippany NJ(?)for business once when the the family that ran the place began cooking curry(?) on the floor above my room, and the smell permeated the place.

Not necessarily a bad odor. It was what it was. I’ve just never ventured further afield into Indian Cuisine.

Probably not beef. Chicken is fair game but beef and pork are taboo, except for water buffalo (in some areas of India). I don’t know why water buffalo are not considered beef by some Indians.
