I am majorly ‘low carb’ these days (Keto - less than 20g) so I’ll see what I can do to Keto-ize these recipes. The squash casserole looks good except for the topping .... pancakes a little harder, but maybe I can come up with something.
I LOVE squash, especially yellow squash fried with onions - my granny used to make it that way & no one could do it like she could (my mom gets close)!
I stir-fry yellow and green zukes with a sliced onion in Teriyaki sauce and some sesame seeds on top. They serve this on a local Japanese restaurant as a side dish. I’ve always loved it.
I used to be crazy for Stuffed Zucchini Boats, but I’m totally burned out on them, now.
