I like to joke that my dad is the most Italian man alive, but that would be inaccurate hes just a regular amount of Italian. But it wasnt until later in my life that I realized that my dad wasnt uniquely a pain in the ass about food, and that most Italians are insanely tightly wound about their cuisine.
Last year, I came across a Twitter account that exemplifies that attitude, and it quickly became one of my favorite places online. Italians Mad at Food (@italiancomments) is a treasure trove of, well, Italians mad at food. The creator, who is not Italian, combs the comments on Tasty and other viral recipe purveyors on Facebook to bring you the best (read: maddest) Italians the internet has to offer. Theyre furious that American recipe sites have taken their beloved national dishes and spit out deranged remixes; one-pot pasta is particularly enraging for them, as well as anything cooked in a cream or milk-based sauce, but there are no limits to their anger. Same here, every trip north, south, Adriatic coast, Mediterranean coast, boot and toe, except for one time when we rented a car to drive across the "outback" in the center of Sicily, between Messina and Palermo, by way of Caltanisetta. We thought the food would be fabulously authentic at the little roadside stops, but it was awful after we left the populous east until we got to the outskirts of Palermo.
Then again, it might have been our budget to blame. That trip was a long time ago.
Lots of the old timer Italians make potato pizza with greens on it, And by God they use a Béchamel sauce, and hot Hungarian wax peppers.

Pasta è fagioli! Made here, or made in Italy? It's one of my favorites to make and to eat. Must use real cannelini beans, lots of garlic, wilted escarole with lemon, and ditalini or small penne. I love it as soup, too.
Tomatoes need the right kind of soil, lots of sunlight and LOTS of water. Test your soil ph and see it that’s the problem. One of my friends had good luck with chicken and goat manure from a local farm.

The best affordable Italian food on the east coast is not in NYC Little Italy, but in Philadelphia. Being right on a river a short hop from the ocean, there is plenty of seafood available and it is always offered at reasonable prices at the little neighborhood restaurants -- mussels, clams, various white fish, sea bass, scallops, shrimp, oysters, swordfish (pesce spada -- my favorite), tuna, you name it.

A proper Neapolitan pizza has olive oil and garlic on the crust, sprinkled with a few whole Roma tomatoes just mashed enough to let the juices run into the olive oil, a few one-inch dabs of fresh, white, unsalted mozzarella, and two or three fresh basil leaves. That is all. Baked in a wood-fired oven.
Almost right - for a proper VPN (
Verace Pizza Napoletana) pizza, you must use DOP San Marzano tomatoes, hand crushed.
Kalamata olives and artichoke hearts as well as the fresh mozzarella and basil are sublime!!!!
