I introduced my youngest daughter to Waffle House when she was in college. I got to her college in the Shenandoah Valley and said “Let’s eat at Waffle House for a change.” She reluctantly said “OK”. And then she discovered their “cheesy eggs” i.e. scrambled eggs with cheese and the waffles and she has been a dedicated customer ever since.
I remember when I use to go to National Guard training near Ringgold, GA, where I was an instructor. There was no mess hall on the small training area so we had to eat in local restaurants. Breakfast was an easy choice, since military in uniform got free coffee with meals at the local Waffle House.

I used to love their food but when I retired I started eating healthy to lose weight and lower my cholesterol. After two years of not eating bacon or anything fried the greasy food didn’t taste as good anymore. I love gravy and biscuits, country ham, and all the good southern food but I can’t deal with the grease anymore. I love cheesy eggs BTW but can’t eat them anymore either. Denny’s affects me the same way. If I eat at either one of those I taste grease for 24 hours after eating.
I miss the Shenandoah Valley! My brother stopped there yesterday after visiting DC and made it a point to call me. Actually he wondered if I remembered the school Mom taught in when we lived up there. They were the old Wenonah Elementary School which had been the old Basic City High School Building and Westwood Hill Elementary School were the schools.
