Any idea if they ever are made with brains?? I had a chef at a high end resort tell me they were brains after he had me try them.... LOL. I always thought I had tried brains after that.
In preparation they can appear similar enough and have a close enough texture for people who havent had both to not know the difference. If he was a chef at a high end resort I would suspect he knew the difference and was pulling your leg. It is common in the restaurant industry to advertise one thing and serve another, a common example around here is zander for yellow perch or walleye, but, I would think that a chef working at someplace with a reputation to protect wouldnt take the risk on something like that or at least I would hope not.
