Brooklyn BBQ is spreading to every corner of the worldColombia, Spain, Panama, Sweden, England, and Japanlooking like it came straight out of Williamsburg. But why aren't these countries taking cues from Texas or Kansas City?
After sitting down at the restaurant Pork in Barcelona, a long menu describing different preparations of pork is set before me. There is charcuterie made from Iberian pigs, various types of dry-aged sausages and chorizos, and slow cooked and grilled pork. Everything is sold by weight. There are also hanging Edison bulbs and the beer, brewed in conjunction with a cult brewer in Liverpool, is served by the jar or by growler. There are butcher knife tap handles in front of white subway tiles. After the waitress explains the menu to me, she says a restaurant in New York was the inspiration.
"In Brooklyn?" I ask.
She nods.
"Fette Sau?"
She nods again. I'm not surprised. This is the third time I've heard this in a year.

The joys of being a major agency account, those nights out on the town. Employer had a contract with Cityride so black car at our disposal. There are worse ways to do Manhattan than swanning around in the back of a black Lincoln Town Car, lol.

I had some very good BBQ in Maine.
I think it was Nanooks Northern BBQ and Tavern :)

Too bad.... Gill should learn to write without the obscene language.
There was this great New York style pizzeria near me in SC. It was great pizza. Then they changed hands and it sucks now. Amazingly they changed all the ingredients to apparently much cheaper.
The sauce has now spice to it. It now just seems like tomato paste spread thinly and a shaker of Oregano passed over it. The Mozzarella is dull and listless, like plastic. No oils excreted by this Mozzarella The dough overwhelms everything, like they forgot that all that cheese, pizza sauce is supposed to enhance the dough.
All I can taste is dough and oregano with the tomato base and mozzarella where cheap afterthoughts.
In Tx Schoepf’s BBQ is one of my faves.
They have venison sausage lb season and great 1.5” thick smoked pork chops, the pit master lets you pick your meat, then you go see the girls for sides and desert.

The dough makes a great deal of difference. Good pizza is fairly simple but the simpler things are, the more it matters to get what is there, right. What most people think is pizza, ain’t pizza.
Meh.. He’s a kid.
Or a nice kosher beef hot dog and cold beer stand called Just For The Hell Of It.
Mine wasn’t exactly plush but the per diem wasn’t bad. If I could book the company flat across from the UN I had that much more to work with, and the black car service was on contract and didn’t show up on an expense report. Overuse or abuse it and you’d get called down, though. Most of the more grand dining was courtesy of the ad agency. Different expense account.
I tried a few times and absolutely nothing to write home about. And I’m a guy who raced from the number 1 rated bbq in Dallas to the number 2 when they were told on the line that there wouldn’t be any food left. 2 was great. My new favorite is a little hole in the wall deep in South Carolina. Awesome. Brooklyn not so much.
The crust and the sauce is the secret ;)
