In my case, I'd have to say either whale at a restaurant in Iceland, or fried crickets when I was in Zambia.
The whale was delicious. The bugs....not so much.

Fish stomachs in Hong Kong. I took two bites and it was everything I could do to get it out of my mouth before I spewed all over the table. It was a texture thing.

I had some fermented skate in Korea recently. Tastes like ammonia. It’s a delicacy they serve on special occasions.

Guinea pig in Peru. Stringy, does not taste like chicken, and figure it is more like what rat would taste like.

Deep fried maggots in Mexico. Not bad once I got over the fact they were maggots.

Shanghai. .. The Red Rooster. A fish I picked out in an aquarium. The caught fish was dropped into kettle and deep fried au natural’. Everything was crispy brown like potato sticks. Bones and all. It was delicious. .

Steak strips tartar? Not that exotic but still - I like my steak rare but not shredded and raw.

One of the meats in Parilla Mista Argentina (a mixed grill) is intestine stuffed with Pate and grilled. It is delicious.

I agree....I think it’s the fact that goat is very bony and you have to
work to get the meat out that makes even better.
