A British pub near us has a yummy take on nachos. They start with a base of their house chips (thinly sliced Idaho taters that are fried until light brown and crispy) then topped with braised shredded short rib, cheese sauce, jalapenos, chopped tomatoes and sour cream. It's a HUGE platter full that four people can easily share or two can make a dinner out of.
