Weekly Cooking (and related issues) Threaqd

Now that Thanksgiving has passed, the bustle of preparing for Christmas begins. This weekend my husband put up our lights (every year he adds a little something, and by now I suspect our balcony and windows can be seen from space) and we've got most of the gift shopping done. Now I'm thinking about food.

I have never made Christmas cookies as much as I’d like because I felt they had to be done close to the holiday, when I'm usually very busy; and many recipes lose a lot if you freeze the baked product.

For some reason I didn’t think to make at least the dough ahead and freeze that, though I’ve done it with savory pastries. Here from All Recipes is a guide to freezing and then baking your cookie dough, and even your cookies:

I recently obtained a copy of the first Food52 cookbook, " the first-ever online community cookbook", which has a lot of very interesting recipes, including a good recipe for Eggplant Parmigiana, and a roasted beet/citrus salad that I want to try.

It's a very nice book, the Kindle version of which is currently available on Amazon for $.99; and it includes ‘Secret Cookies’ - which apparently got their name because they were passed down in confidence by an elderly woman who said, “After I’m gone, you may give out the recipe.”:

Good old Apple Kuchen works good in any pan, just do the toothpick test.

I substitute apple sauce for the water, used granny Smiths on the Top and drizzle sour cream Dutch German design over that.

When the sour cream begins to brown you turn it down and test again with the toothpick

I made steak au pouivre tonight from the 2 for $5 bacon wrapped steaks from Aldi. They went well with the leftover garlic mashed potatoes.

Cookies are one of my favorite thins on earth. Those sprinkled sugar cookies are one of my favorite kinds! My husband has been getting bags of Pepperidge Farm sugar sprinkled gingerbread men. I have zero will power around those babies ;)

We still have mashed potatoes left, too ;-)

I like the Aldi store; we find a lot of interesting things there, and I don’t see much difference at all in the prepared foods compared with “name” brands.

They make a wonderful ready-to-bake sourdough bread that comes out very good.

Betty Crocker classic sugar cookies. To me, the secret for flavorful rolled cookies is using powdered sugar and almond flavoring as these do but I haven't made these particular ones. These look like too much work to decorate but have had my eye on them.

My mom used to make apricot meringue bars which were always a big hit but aren't particularly Christmassy. And there is no substitute for Peanut Blossoms.

I used to look forward to buying Maurice Lennel's spritz with a dollop of red raspberry pasty something. Also their powdered sugar almond crescents. And always looked forward to Archway's Pfefferneuse which most people probably don't like, developed a taste for it.

Our stores don't have them any more. Lennel's out of Chicago went out of business and I don't know what became of Archway. The replacements on the shelves are substandard imo. Bakery cookies are good sometimes but expensive and not as good as homemade.

I don’t bother much with recipes but have a deep respect for techniques.

I look at 100 internet recipes and remember What Gammar tought me as a child

We have Archway in the DC area supermarkets; not sure they’re the same cookies, but the oatmeal ones are great. They were apparently bought by the Lance company, but in our area they are still ‘Archway’.

Seriously I was trying to think of Archway earlier

My Dad used to have them for lunch and I had them for lunch, that and fried bologna sandwiches with mozzarella cheese and pizza sauce ‘cause folks don’t cook everyday any more

Walmart should have them, if there’s one near you; or you could order online. Our Safeway store has the oatmeal, windmill, and I think a lemon one.
