But my back is stiff, everything hurts and I have to go chop celery and onions. I have the same problem. But I use the Paul Prudhomme method while assigned the task of Sous Chef: I sit my arse down in a tall chair that is high enough to comfortably access the cutting board.

Throughout the year, chop up those celery leaves and root ends and put them into a freezer bag. Use them for soups and the Thanksgiving dressing. That’s one less chore on a busy cooking day.
