Just looked it up. Sounds yummy! The recipe I found calls for 8 slices of white bread to be toasted (basically croutons) so I’ll leave that out, but I’m definitely going to try it. I love Big Macs, but haven’t had one in years. Can’t remember the last time I ate at McD’s. I’d rather starve. Who knows, maybe I’ll be able to get youngest son to eat a salad!
Croutons? Haven’t seen a Big Mac Salad with those since it’s low carb. Go bunless.
Big Mac Salad: 1 serving
Reconstitute 1 T dehydrated onion bits in a T of water (McD doesn’t use fresh onions)
In a bowl, microwave until just melty - browned ground beef, the reconstituted onion bits and 1 slice American cheese.
Toss in lettuce, low carb Thousand Island Dressing and 1 t pickle relish (or chopped dill pickle).
Low Carb Thousand Island Dressing: Makes 1.5 Cups
1 1/4 C mayo
2 T ketchup
2 T dill pickle relish
dash Worchestershire
1 T vinegar
4 t Splenda
dash pepper
I can eat the dressing straight out of the jar! This is a quick lunch once you have the cooked ground beef and dressing on hand. Great for a work lunch packing the to be nuked stuff in one container and the rest in another.
