A decent, well-made macaroni & cheese (imported from England and found in their medieval cookbooks!) is highly nutritious. Of course, if you eat the junk in a box (which looks like worms vomited up into a bowl), yes, that would be unhealthy and unpalatable.

Probably it’s because my Mom made it, but I much prefer “Spaghetti and Cheese”, made with Longhorn cheese.

The day-glow orange stuff with rubbery elbow macaroni is disgusting. The home made, almost lasagne-like Mac & Cheese that my aunts made was awesome, three different types of cheese, sharp cheddar, white cheddar and velveeta, in a casserole dish, grate some extra cheese on top and bake it until it’s browned. You can get creative with it, too. Like Pepperjack? Use it. Want some onions or garlic in there? Go for it, but you’re going to have to account for the moisture in it.

Good Mac & Cheese made this way once was fairly easily found in southern diners and cafeterias, too, but it’s increasingly difficult to find now.

My favorite is a recipe from “The Vegetarian Epicure” in the ‘70s. I’m not a vegetarian but this mac and cheese is rich and delicious. Fontina, fontinella, and Parmesan cheeses.

Macaroni with shredded sharp cheddar cheese is much better than any boxed Mac and Cheese; and just as easy to make.
