Mac-n-cheese probably isn't more toxic than other foods
popular science ^

Whether you prefer the classic stuff in the blue box or the organic brand famous for its pasta bunnies, you probably realize that mac-n-cheese isn’t healthy, exactly. But given the fast food alternatives, we tell ourselves, it’s isn’t that bad. And yet, because everything we love is secretly conspiring to kill us, a recent report suggests that each serving of America’s favorite processed cheese food also serves up a hefty dose of phthalates... But does this mean that you should give up eating that orange goo?

...

Thanks to a 2008 bill, phthalates are now banned in the production of children’s products (like toys). But they're still abundant. You’ll find phthalates in vinyl flooring, aftershave, nail polish, and increasingly in food, although their presence there isn’t completely understood. It’s thought that some foods packaged in materials containing phthalates (including cellophane, paperboard, and plastics) pick the chemicals up as they sit on your shelves. Tasty.

Before delving into the mac-n-cheese report that is currently making the rounds, it’s important to note that unless you’re raising cows yourself with a feed you’re making yourself (and hand-milking said cow into glass containers), almost all dairy products you consume contain phthalates. In fact, you might do all of the aforementioned dairy farming and still find that your milk contains the chemicals. A 2013 study in the journal Environment International tracked the progression of eight different phthalates through the food chain and determined that basically every step of the milk production process helps introduce phthalates into the end result.

...

Which brings us to the mac-n-cheese report...conducted ...at the behest of a host of environmental groups—including the National Resources Defense Council, Earth Justice, Center for Science in the Public Interest and others—under the not-exactly-subtle consortium name “Klean Up Kraft”.

“50 cents of ingredients sold for $15. Please!”

It’s worth if for me,just like the $2.00 cup of coffee that goes with it.

käsespätzle is the gold standard of mac-n-cheese.
This is worth repeating.

käsespätzle is the gold standard of mac-n-cheese.

The spätzle maker.

Use good cheese - emmentaler or gruyere cheese. Splurge.
Use at *least* three onions caramelized in butter.

Got addicted in college and it’s still one of my favorites. (comfort food)

Kraft used sell that powdered cheese in a canister. Now I just cook 1/2 the noodles and all the cheese.

Kraft also used to sell a great Chicken and Noodles in a box. But it had to be cooked in 2 pans, too much “work” these days.

The day-glow orange stuff with rubbery elbow macaroni is disgusting. The home made, almost lasagne-like Mac & Cheese that my aunts made was awesome, three different types of cheese, sharp cheddar, white cheddar and velveeta, in a casserole dish, grate some extra cheese on top and bake it until it’s browned. You can get creative with it, too. Like Pepperjack? Use it. Want some onions or garlic in there? Go for it, but you’re going to have to account for the moisture in it.

Good Mac & Cheese made this way once was fairly easily found in southern diners and cafeterias, too, but it’s increasingly difficult to find now.

I miss that cheese powder, too.

A search on "Kraft cheese powder" yielded the following results:

I used to love Mrs. Grass chicken soup with the little `golden egg’ flavor thingee. It was like Liptons, but the golden egg made it special.

My favorite is a recipe from “The Vegetarian Epicure” in the ‘70s. I’m not a vegetarian but this mac and cheese is rich and delicious. Fontina, fontinella, and Parmesan cheeses.

The classic box may be OK. I survived on it for undergrad ;) and fed it to my kids as well.

However, I highly recommend that no one ever eat the “add water” microwavable bowls!!!!!!!!!! I would put a skull and cross bones on the microwavable bowls lid ;(

A couple years ago, I was quite sick with bad cold/sore throat — looking for something warm and easy. Son had left a box of the instant stuff on counter from when visiting with grand kids...just easy to grab one, add water and microwave it rather than go downstairs to pantry to find some soup or bouillon...Biiig mistake!!

I felt like I had a brick in my stomach for the next day and a half. As if the stuff that makes the water, and milk and cheese powder congeal made the entire contents of my digestive system congeal as well. Ugh...

I don’t have a “temperamental tummy,” but something in the instant microwavable bowls made me feel really lousy!

Not sure how pre-schoolers can eat that stuff and not get ill.

You’ve all been warned ;(

i can just see the new Kraft tagline for their mac-cheese:

“New, Improved Mac-n-cheese, now no more toxic than other foods!”

Macaroni with shredded sharp cheddar cheese is much better than any boxed Mac and Cheese; and just as easy to make.
