Not really nocturnal, they eat when they get hungry, even in the middle of the day.

My dad and grandmother would go catfish fishing very early in the morning.

Love it. Battered deep fried and dipped in butter and lemon. Heaven! Come to think of it, anything dipped in butter and lemon is heaven. LOL!

Deep fry them in lard or beef tallow, not vegetable oil. I don’t use vegetable oil for anything.

Yep, lard is the best, then fry some tators and zucchini. I got a freezer full , after all this rain, waiting for this weekend to fill the other freezer.

What’s the best way to prepare them before frying? Roll them in beaten eggs and then cornmeal? Looking for a good southern recipe.

Egg wash and House Autry breader. (it’s a NC product so I’m biased). Then sprinkle on Texas Pete(another NC product). :)

On the bigger fish, make sure you filet out that red meat that goes down the outside of the fish. I use white self rising corn meal mix, it has just the right amount of flour in it and no, you do not have to roll them in egg. I season my fish before I put them in the corn meal mix, your fish, your choice of seasoning.

Yes, and coconut oil is also good. We have naturally refined coconut oil that does not smell or taste like coconut. Makes everything delicious!

Corn oil, soybean oil, canola oil are all very bad and should be avoided. These 'omega 6 oils' are not essential. They are poison to the body.

Yep for the bigger ones (over 5 lbs), it’s best to bleed them if possible by cutting off the tail before cleaning as it helps whiten the meat.
