In last weeks thread, we discovered that some of our Freeper Friends dont like lima beans, and joked about doing a thread on despised foods. Instead, lets just call it less universally enjoyed foods; and heres my Lima Bean Casserole recipe. I cant recall where I got it, and the original recipe called for frozen limas; but I learned that canned ones work a lot better in this recipe.
Cheesy Lima Bean Casserole
2 pks. frozen lima beans, cooked (20 oz.) Or equivalent canned
1 C. each cottage cheese and sour cream
½ C. finely diced sweet onion
2 cloves garlic, minced
1 tsp. Each Worcestershire sauce and Dijon mustard
2 tsp. Paprika
½ tsp. Salt
Parmesan Cheese
chopped parsley
Combine cottage cheese, sour cream, onions, garlic, Worcestershire, mustard, paprika and salt. Gently stir in the cooked lima beans.
Pour into a greased baking dish. Sprinkle with the Parmesan cheese. Bake at 350 degrees for 35 to 40 minutes. Sprinkle with parsley before serving.
We also learned that Brussels Sprouts arent universally adored. Freeper thingumbob posted a recipe that I really want to try I bought the Veri Veri Teriyaki last weekend just for this, but havent tried yet:

In the meantime, heres my pickled Brussels Sprout recipe. This recipe originally called for 1 C. of Cider Vinegar and ½ C. of water but we do a cup each of vinegar and water, to make it a little less sour; and we usually use a bag of the frozen Hanover Gold Line baby sprouts, instead of fresh. This is great warm or cold that is, if you like Brussels Sprouts ;-)
Dilled Brussels Sprouts
1 bag frozen Baby Brussels Sprouts
1 C. cider vinegar
1 C. water
1 clove garlic, split (we use 2)
1 dried red chili pepper (we use 2)
1 T. dried dill weed
1 tsp. Salt.
Thaw the frozen sprouts before beginning. Combine all ingredients in a saucepan. Bring to a boil, lower heat, and simmer until sprouts are tender.

I absolutely love lima beans...have since I was a kid. I’ve been known to eat them straight out of the can (how embarrassing:) Didn’t see a recipe for Calico Beans posted; this is close to the recipe my Mom uses; all the guys love it:

BAKED BRUSSELS SPROUTS / appy for one
METHOD Toss Brussels sprouts leaves, tb evo, s/p. Spread on ol/oil sprayed foil on sheetpan in single layer. Bake crispy 350 deg 10-12 min. Watch carefully/ burns easily. set aside to cool.
ALMONDS bake/toast almonds lightly brown. Set aside to cool.
DRESSING mix ½ tb red wine vinegar, ½ tb olive oil, tb drained capers. Add salt and red chile flakes to taste; mix well.
ASSEMBLY Plate crisp Brussels sprout leaves, then dressing, sliced almonds, and chp parsley.
SERVE immediately.
ING 20 Brussels sprouts separated into leaves 1 ½ tb evo ½ tb red wine vinegar tb drained capers 2 tb sliced almonds tb finely chopped fresh parsley s/p, to taste red chile flakes, to taste

I think you're right. That's probably why cabbage gets such a bad rep. Too many people have bad childhood memories of boiled cabbage stinking up the house. But it's another vegetable that benefits from a nice pan saute or roast.
A girl close to my own heart :-) Cream of tomato soup is a favorite. Grilled cheese, popped corn or oyster crackers (perhaps a pat of butter) on top - all of these contribute to a stick to your ribs meal.
Ree has certainly left her mark on a small Oklahoma town. I remember seeing a video of the building just as renovation was beginning. That she has come this far is truly inspirational. A future Paula Deen, perhaps.

DH once lived in that small Oklahoma town before coming to Texas. There is little he sees in the videos he is able to identify. Town Square and a courthouse - the common factor of all small towns.
Except for Cole Slaw, I was never a cabbage fan, until I found this recipe in a Shaker bookbook:
Cabbage in Caraway Cream
2 tsps. Butter
1 T. caraway seeds
1 small head cabbage, Shredded Coarsely
1 tsp. Sugar (opt.)
1 clove Garlic, minced
1 tsp. Salt
1-1/2 T. Vinegar
½ C. Sour Cream
Heat butter in skillet. Add cabbage, salt and garlic, and stir well. Cover tightly and steam 10 minutes, or until tender (a little water may be added, but if you cook slowly, the cabbage will wilt and give up its own water.) Add caraway seeds, sugar (if used) and vinegar. Stir in Sour Cream, and serve immediately
That’s a lot like the ‘Barbecue’ Lima Beans that my husband makes. The problem with getting his recipes is that he ‘eyeballs’ everything, and it’s like pulling teeth to get him to give measurements. I’ll have to get him to make them soon, and watch over his shoulder ;-)
