Beets are VERY nutritious and are way tasty when pickled. Or Harvard beet style. People don’t respect the beet! The drawback to growing beets is that they are labor intensive to rinse clean, and they tend to stain things during processing.

They are very easy to grow and the baby greens are very nutritious.

I’m going to be eating more of them for sure. I know that beet juice is supposed to be very effective for lowering blood pressure too.

I even like them just cooked and sprinkled with feta cheese, which is easier than pickling. I’m thinking that I’ll can them half of them pickled and half just plain with a little salt.
